Anthocyanins are natural pigments responsible for the red colour of red grapes, accumulating in the skins during ripening. For a good skin colour it is important to have high temperature contrasts, that is to say high temperatures during the day, and cooler temperatures at night. That is why red grape varieties don’t ripen well in areas that are either too hot, or too cold.
