Rosés: where does the colour come from?

To make rosé wines we need to use red grapes, as the colour is found in the grape skins, so a short maceration before fermentation will extract the pink colour.

Normally Penedès rosés are a bright cherry red colour in the case of longer macerations and a paler color if the maceration is shorter. Characteristic aromas are o strawberries and red fruits and the predominant tastes are those of red fruit.
