The harvest in the Denominació d’Origen Penedès starts at the end of August. The grapes have to be picked at the optimum level of ripeness. To choose the right moment growers and winemakers control the ripening process throughout August and September. They pick a hundred grapes at random from each vineyard and test their sugar content and acidity.
Having chosen the optimal moment, they start picking, which is usually done by hand. This treats the grapes more gently, avoiding any oxidation and ensuring the skins do not burst which would lead to problems during the winemaking process.
Once in the cellar, the grapes are transformed into must and then wine, producing the high quality wines of the DO Penedès
