October sees the last days of the harvest in the Penedès. The grapes, selected by hand in the vineyard, arrive at the cellar.
The first process in the cellar is destemming, separating the grapes from the stems. The grapes then go through an automatic selection table which separates small remnants of stems as well as unripe or shrivelled grapes. Finally we select the very best raw material by hand to ensure a great wine that expresses the essence of the Penedès.
In the final part of the process, before moving the grapes to the tanks, the grapes are lightly crushed allowing us to extract all the must from the grapes.
