To properly understand destemming we need to understand all the parts of the grape: the grape berries, the stems and the vine.
In the first stems of the winemaking process when the grapes are crushed to extract the juice, first the grapes must be separated from the stems. This procedure is known as destemming. If we don’t remove the stems, the contact between the juice and the grape stems will give green, vegetable elements to the future wine.
